HDC (histidine decarboxylase) is the enzyme that converts the amino acid histidine into histamine inside mast cells and immune cells. The body's baseline histamine production runs on HDC activity — independent of how much histamine arrives from food and independent of how fast it's cleared.
Carriers of HDC high-activity variants are associated with elevated baseline histamine production — and a tendency toward stronger inflammatory and allergic responses, more reactive mast cells, and shorter time-to-symptom from any histamine trigger.
